モリブデンバナジウム鋼はモリブデン+バナジウム両方含有するものです。
モリブデン(Mo）、バナジウム(V)を含むことにより耐摩耗性(切れ味が落ちにくい)が良くなり
耐食性(サビにくさ)もよくなることから、包丁の他にも医療用メスや機械部品、工具鋼などで
お手入れが簡単な事が買われ、料理人から家庭用までたくさんの方に喜ばれている鋼材です。
ステンレス製の包丁は、このモリブデンやバナジウムを使用している包丁が多いです。
サビには強いですが、全くサビないというわけではありません。
しっかり水気を取り、乾燥させた上で保管しておく事をお勧めします。
モリブデン鋼のサビの特徴として針で穴をあけたような、点々としたピンホール
のようにサビるのが特徴ですので、取扱は十分お気をつけ下さい。
