愛知製鋼で作られているステンレス鋼で、AUS-6、AUS-8、AUS-10(6A、8A、10A)は
炭素量を増加させバナジウム、モリブデンなどを添加して、硬さ、耐摩耗性、焼き戻し
抵抗性などを一層向上させた鋼です。
主な用途は高級刃物、ハサミ、ポケットナイフ、医療器具、食品機械、機械部品などで
使われている鋼材で、当店でもステンレス製和包丁で使用しています。

でも出刃はサイズの種類が多すぎて、どれを買っていいかわからない。
そう迷われたなら、このサイズを基準に考えていいと思います。
比較的小さい魚を捌かれるなら小さいサイズ。
大きい魚を捌かれるなら大きいサイズ。など目安の一つにもなるサイズとなっております。

また、左利きなのに右利き用の包丁を無理して使っている
もしくは右手で無理して使っている方もストレスなくお使いいただけますし
